These prawns are perfect when you’re feeling peckish and want a quick bite to eat. I often make this dish for my family, when it’s been a busy day and I need to rustle up something simple but delicious.

The delightful combination of juicy prawns, pungent garlic and fiery chillies creates a fusion of flavours and will tempt your taste buds.

INGREDIENTS

  • 30g unsalted butter1 tablespoon olive oil
  • 2 garlic cloves, finely chopped
  • 1 fresh red chilli, finely sliced
  • 170g raw king prawns, cleaned and deveined
  • ½ teaspoon chilli powder
  • ½ teaspoon chilli flakes
  • 1 tablespoon sriracha sauce
  • 1 teaspoon light soy sauce
  • 3g fresh parsley, chopped, to garnish
  • 1 spring onion, finely sliced, to garnish
  • 1 lemon, cut into wedges, to garnish
  • Salt, to taste

METHOD

Serves 3 • Time: Prep 10min, Cook 5min

  1. Melt the butter and oil in a large wok on a low heat.
  2. Add the garlic and fresh chilli, stir and cook for 1 minute or until fragrant.
  3. Add the prawns, chilli powder, chilli flakes, sriracha sauce and soy sauce.
  4. Cook, stirring occasionally, for 7–8 minutes, until the water released from the prawns has evaporated and the oil comes through to the top.
  5. Garnish with chopped parsley, spring onion and lemon wedges, and eat on its own, with salad or on a slice of toast.

I started the YouTube channel back in 2014 when I used to sell cakes and my first video was actually showing how I made a simple cake sponge. A while later in 2015, after posting pics of food on my Instagram I used to get lots of requests for recipes of what I had posted and it made me think back to when I was learning to cook, and apart from my mum if I asked anyone else I just got a load of excuses, people just wanted to keep recipes for themselves, and many others experienced the same.

Since then it’s been my mission to try and make sure anyone from whichever background is able to cook and enjoy good home cooked food especially the food I grew up enjoying from my childhood and I’ve never looked back since.

When I first started, I thought even if I could teach one person this life skill then that was my job done, but I get messages on the daily from teenagers and upwards trying out recipe’s and asking my advice, really makes me happy.
