The attention to detail that underscores the design and decor of this 80-cover venue is quite something too, with a huge clay oven defining the interior of the ground floor, and a bonsai tree as the centre piece to an Instagram-friendly second floor.

Sustainability is an integral part of their business model, such that their eco-friendly restaurants make full use of packaging made from recycled materials.

Having taken Leicester by storm since opening at Fosse Park in 2021, Fattoush aren’t just preparing to open in the city centre by the end of this year, but are also looking for franchise partners as they begin to branch out across the UK.

A closer look at this fast casual restaurant’s irresistible menu reveals why they’re disrupting the country’s Halal food scene in the way that they are.

With an experienced Lebanese chef leading the team, Fattoush have found that perfect balance between “carrying the traditional ingredients and flavours” while pushing the boundaries of innovation.

Just take their newly-introduced Halloumi Fries as an example. Dipped in a herbaceous batter before being deep fried to a crispy finish, these are drizzled in a tahini-pomegranate sauce, dusted with sumac, and served on a bed of salad.

Fattoush’s innovation introduces these fantastic Halloumi Fries

The pride they’ve taken in carefully-conceiving their dishes to deliver customers a unique experience can be seen by their extremely popular fusion bao buns.

With a pair of inhouse bao buns (£7.99) steamed to a pillowy finish, they offer the following choice of five fillings: beef, chicken, halloumi, falafel, and tofu.

And while extra buns are available for just £2.89 each, the order can be upgraded to a meal with skin-on or sweet potato fries, a dip and a byblos beverage for an extra £3.49.

Putting the ‘urban’ into Lebanese cuisine with these Bao Buns

Fattoush’s spirit of innovation encourages them to create simple, yet healthy and flavourful items to deliver new tastes and experiences.

To this end, they’ve created a selection of wraps with Lebanese tortilla flatbreads positively packed with a protein, sumac onions, chopped parsley, diced tomatoes, and a choice of the following sauces: minty Pink, Spicy Tahini, garlicy Toum, Sriracha Mayo, Lebanese Chilli, or a mango chutney Amba.

Lebanese wraps that strike the balance between simplicity & sophistication

The vibrant flavours of Lebanese cuisine are not compromised either when Fattoush combine between health and nutrition, and taste.

This is no better demonstrated than by their range of build-your-own Bowls, all of which include tabouleh, carrots, red cabbage, sumac onions, parsley, pomegranate, jalapeño, roasted sesame seeds, diced tomato, chickpeas, and pitta bread.

The fun-factor comes when customers are invited to choose five proteins; a choice of three bases: skin-on fries, sweet potato fries, or Lebanese rice; one of the following mezzes: Moutabbal, Hummus, Ezme, Tzatziki; and the additional option of a staggering 21 toppings.
