Drawing inspiration from his roots, Burgista Bros’ Chris Large has gone Down Under by pulling out from the outbacks this month’s latest Chef’s Special Burger, The Australian. But, don’t be intimidated… well, actually be intimidated because if ever there was a paradox, then this monstrous thing of beauty, literally floored us for its audacity, its taste, its… well, everything.

We are talking WAGYU BEEF here baby, sourced directly from the land of the Aussies, and combined with three – not one, not two, but three – slices of Turkey Bacon rashers, Applewood Cheese, Fried Egg, Onion Marmalade, Beetroot, and a whole host of other goodies, all for £13. Don’t be too dismayed by the price tag though because that’ll instantly be forgotten once you’ve extended your jaws beyond the point of no return and taken that first bite.

Now, usually Wagyu Beef is quite fatty (around 40%) and grainy; but to make this burger what it is, Chris has opted for neck meat (only 20% fat) that’s not only far leaner, but has also been minced twice over to get rid of said grain.

And so what does it taste like?

First thing’s first, the taste of the meat is fantastic. Whatever seasoning’s been used, has really enhanced its natural flavours because even with all the other condiments, you can still taste that juicy, succulent meat.

The first bite delivers a cacophony of flavours, textures and even temperatures ranging from the sweet, cool, crunchiness of the red onions, to the earthiness of the beetroot, the mild sweetness of the onion marmalade being tempered by the tanginess of the gherkin, and the soft, creamy yoke of the fried egg combined with the crispiness of the strong flavoured rashers (yes, we have large, hyper extensive mandibles). And those flavours don’t abate with each successive bite either.

Let’s just sum the entire experience up as follows: if we could give this solitary burger a 10, we would!
