All our sites have strict procedures in place to avoid any cross contamination so that we can cater to all customers needs – Dickie Nelson, Fat Hippo Exec Chef

Fat Hippo will be opening their first restaurant in Glasgow today with the first 100 guests being treated to free burger and fries.

Located in the city centre’s St. Vincent Street, this 80-cover venue will be opening at 11.30am with the offer available until 3pm while stocks lasts.

Fat Hippo have informed FtLion in the past that “the chicken we use across all locations is certified Halal but the beef is not. All of the raw ingredients are segregated and the chicken is cooked in its own separate fryer.”

Executive Chef Richard ‘Dickie’ Nelson has further confirmed: “All our sites have strict procedures in place to avoid any cross contamination so that we can cater to all customers needs.”

Fat Hippo chef clarifies Halal prep & cooking procedure

Going into more detail, he reassured that despite some dishes containing bacon, “when a customer requests a dish be Halal, the server will process the order with an attached note and also confirm with the kitchen that this has been received and understood”.

With all utensils being colour coded, Dickie said of their cooking process: “Sites have a dedicated chicken fryer which is only used for cooking chicken. No other fryer is used and no other product is allowed in the fryer as well. Oil is changed on a daily basis to ensure best quality.”

He further added: “For the cooking process, disposable gloves are worn and disposed of after each cook cycle.

“If a customer requests that there meal is Halal, our brioche buns are toasted separately under a grill. This grill never gets used for any pork or non-Halal meat products.

“When it comes to plating the food up, if there is a case where a customer has made any dietary requests, these orders are sent to the pass first; and the server on the pass will be wearing gloves in each instance.”
