If you want the experience of dining out but from the comfort of your own home, this recipe is for you.

The Chicken Firecracker is always a crowd-pleaser and goes down a treat if you’re hosting a dinner party; every bite contains an explosion of flavour.

  • 2/3 chicken breast pieces
  • Soy sauce
  • Oyster sauce
  • 2 tbsp ginger puree
  • 2 tbsp ginger puree
  • 1 onion
  • 1 packet sugarsnap peas
  • 1 chopped red pepper
  • Sriracha sauce
  • Cornflour
  • Egg
  • Rice
  1. Cube the chicken breast pieces and marinade in 60ml soy sauce, 30ml oyster sauce, salt to taste, 2 tbsp ginger puree and 2 tbsp garlic puree.
  2. Mix and marinade for 1 – 2 hours.
  3. When you’re ready to fry, coat the cubed chicken in egg wash and cornflour and deep fry until lightly golden.
  4. Heat olive oil in a pan and cook the onion.
  5. Once the onions have slightly browned, add the packet of sugarsnap peas and the chopped red pepper into the pan, stir-fry until cooked. Add salt to taste.
  6. Next, add 30ml Soy Sauce, 150ml Sriracha Sauce and mix together until the vegetables are coated evenly.
  7. Add the fried chicken to the sauce mixture, add more Soy Sauce or Sriracha if needed – garnish with spring onions.
  8. Serve with rice and top with 1 Thai red chilli.

Note: Add ketchup to the mixture to even the spice level depending on personal preference.
